As it is fall in Canada, it’s the perfect time to make some chewy chocolate chip cookies for your kids to surprise them this season. It’s not just easy but fun as well. First, choose a combination of milk, semisweet, and dark chocolate pieces rather than using chips. The second is to allow the dough to rest for at least a whole night for a richer, toffee-like taste. Finally, use an ice cream scooper to consistently produce cookies of the same size. That’s all, then! These minor adjustments produce a cookie that is soft and gooey inside and textured on the exterior. Absolutely perfect!
Ingredients for around 12 cookies:
- Granulated sugar, half a cup (100 g)
- 3/4 cup packed brown sugar (165 g),
- one teaspoon: salt
- 12 cup melted unsalted butter (115 g)
- 1 egg
- Vanilla extract, 1 teaspoon
- All-purpose flour, 1 1/4 cups (155 g)
- 1/2 tsp. baking soda
- 4 ounces of milk or pieces of semisweet chocolate (110 g)
- 4 oz. chunks of dark chocolate
Preparation Method:
- Whisk the sugar, salt, and butter together In a large bowl until a paste is formed with no lumps.
- Add the egg and vanilla and continue beating until thin ribbons start to form on the whisk and drop back into the mixture.
- Mixture is then folded with a spatula after the flour and baking soda have been sifted in (Be cautious not to overmix, which would cause the gluten in the flour to toughen, resulting in cakier cookies).
- The dough should cool for at least 30 minutes after the chocolate pieces have been added. Refrigerate the dough for a whole night to give it a taste and color more akin to toffee. The flavor of the dough will get more nuanced the longer it sits.
- Oven should be heated to 350°F (180°C). Use parchment paper to cover a baking sheet.
- Using an ice cream scoop, portion the dough onto a baking sheet fitted with parchment paper, allowing at least 4 inches (10 cm) between cookies and 2 inches (5 cm) between cookies and the pan’s corners to allow for equal spreading.
- Bake for 12 to 15 minutes, or until just beginning to brown around the edges.
- Prior to serve, finish cooling.
